Background
The Civilization of Beer was founded by Samuel Merritt in the fall of 2006 after he concluded that, in New York, one of the most exciting and vibrant culinary communities in the world, highly trained culinary professionals were not trained on the basic ingredients and styles of beer.
This was made clear to Sam through his ten years of sales and brand management for The Craft Brewers Guild and The Brooklyn Brewery.
Wine training for the culinary professional is widely available whereas beer training, while potentially more profit enhancing, is not.
Substantial growth of the imported specialty and craft beer segments and recent movements and shifts in attitude toward the culinary world provide the perfect environment for the services of this company to be utilized in a way that Sam sees as nothing less than evangelic.

The mission of Civilization of Beer is to promote, through education and appreciation, the responsible enjoyment of high quality, craft beer in the context of our rapidly changing culinary landscape.
Goals
To close the gap between wine studies and beer studies in the professional culinary community and return beer to its proper place at the American table.
To provide educational and entertaining materials, beers, resources, and event services to the private and corporate sectors for a profit.
To operate for the public good, act philanthropically, and partner with those who promote socially responsible and environmentally sustainable practices.
